Valsana Pecorino Pienza Semi-Matured 2kg

Valsana Pecorino Pienza Semi-Matured taste is long, buttery and round. The aftertaste is round, slightly acid however dolce due to the butter of the milk. The typical red rind Pecorino of Pienza, treated with tomato sauce on the crust. The taste is sweet and slightly lemony, round and delicate, with notes of butter and hints of tomato near the rind. The dairy is located on the beautiful hills between the Renaissance town of Pienza and Montepulciano, an area of 190 hectares with olive groves, vineyards and pastures. These pastures, famous for the quality of their herbs give to the cheeses of the Cugusi family the unmistakable flavor and quality.

Sheep’s Milk Cheese

Raw Material:
Pasteurized sheeps milk obtained from the sheep’s farmed by the same dairy in Val d’Orcia.

Appearance:
The rind is thin and its color is red. The red color has to do with the treatment of this cheese with tamato sauce. This has been over the centuries a traditional teachnique of passing some acid taste to the pecorino cheeses in Tuscany. The apste is soft to semi hard and its color is white to ivory. Small eyes are scattered across the paste.

Taste:
The taste is long, buttery and round. The aftertasete is round, slightly acid however dolce due to butter of the milk.
