Ebi Fry with Japanese Rice Flakes

Coated with crispy Japanese Rice Flakes and being deep-fried, that is how you achieve a delicious crispy Ebi Fry! Enjoy it with a delicious dipping sauce that will make you want more!

Usually, Ebi fry prawns are very straight. But it will taste just as great if you wish to keep it in its original state. Season the prawn with salt and pepper. Firstly, dredge the prawn with flour. Secondly, coat it with the beaten egg. Usually, the last step is to coat it with the Japanese Rice Flakes, however, to make it extra crispy, double dredge the prawn into flour and then egg again. Also, you can choose to omit the double dredge.
Heat the oil and wait for it to be hot enough. Gently put in 2-4 prawns in oil. Deep fry them for about 2 and a half minutes or until golden brown. Transfer the golden Ebi Fry onto a wire rack or paper towel to remove excess oil.
Tip: Between batches, scoop up the rice flakes to keep the oil clean. The burnt flakes will make the oil dark. Additionally, do not overcrowd the pot.

Ingredients:
  • 2 large eggs
  • 1/4 white onion
  • 1 pickle (optional)
  • 1/2 lemon (juice)
  • 4 tablespoon Japanese Mayonnaise
  • Sea Salt & Pepper to taste

Start by boiling the eggs. Make sure the eggs are completely covered by water. Additionally, here is a tip: the perfect time for boiled eggs to be cook is 10 – 12 minutes. Once done, discard the water and run under cold water. When eggs are almost cool, you can start peeling them! Meanwhile, dice the white onion finely. Furthermore, you can soak them in cold water for 10 minutes to get rid of the bitter flavour. If you chose to do so, please drain and get rid of excess water in a paper towel. Finely chop the pickles. Once all the ingredients are ready, we can combine them!
Mash the egg in a bowl large enough for the sauce. Add in the pickles, onions, lemon juice, mayonnaise. Season the sauce with salt and pepper to your taste. Cover and keep it in the fridge until you are ready to enjoy it with Ebi Fry!
