Miso Pesto Ramen Noodles

Miso Pesto Ramen Noodles, springy ramen noodles and a cilantro-miso sauce. An interesting twist to a classic pesto recipe. 

Ingredients (2 serving):
  • 4 cups baby spinach
  • 1 teaspoon toasted sesame oil
  • 2 cups cilantro leaves (with tender stems)
  • 1 tablespoon white miso
  • 1 garlic clove
  • 1/2 cup sunflower oil
  • 1 teaspoon fresh lemon juice
  • 140 grams fresh ramen noodles
  • 1 tablespoon unsalted butter (cut into pieces)
  • Salt for seasoning
  • Toasted sesame seeds for garnish
Steps:

Bring a pot of water to a boil. Puree spinach, cilantro, miso, garlic, sunflower oil, sesame oil and lemon juice in a blender until you reach smooth and very green consistency. Season with salt and pour into a medium bowl. Cook the ramen according to your package directions. Drain and add to a bowl with pesto. Add in the butter and toss until all the butter is melted and the noodles are well coated in the sauce. Divide the noodles into two servings and end it with sesame seeds on top!

You can also make the pesto sauce one day ahead. Just cover and chill! However, do note that the colour may darken just slightly but it will taste just as delicious.

Additionally, with the pesto paste, you can easily use it for other things, not just noodles. You can use it as a dipping sauce for chips or more. Also, you can enjoy your salad with this pesto paste. If you are feeling adventurous, even a sandwich spread with a sprinkle of cheese. It can be used a stuffing or filling. For example, stuffing a boneless chicken and oven frying the chicken. Lastly, you can enjoy this pesto sauce as a pizza topping! Instead of using the standard tomato based sauce, you can use this pesto recipe!
