Sake is a traditional Japanese alcoholic beverage. The best traditional sake has three ingredients: rice, purify water and a form of mold – koji. When you combine these three, the koji ferments the rice, resulting in the alcohol-containing rice wine.

Sake’s brewing process is more akin to that of beer. Starch in rice turns into sugars, which then ferment into alcohol. The brewing process also differs from the process for beer, where the conversion from starch to sugar and then from sugar to alcohol occurs in two distinct steps. Like other rice wines, these conversions occur simultaneously while brewing. 

In Japan, where it is the national beverage, sake is often served with a special ceremony, where it is gently warmed in a small earthenware or porcelain bottle and sipped from a small porcelain cup called a sakazuki. As with wine, the recommended serving temperature varies greatly by type.
