Sticky Eggplant
Serves: 1 person
Preparation Time: 35 minutes
Ingredients Needed:
- Eggplant, Halved Lengthways (1 x)
- Ayam Sweet Soy (1/4 cup)
- Extra Virgin Olive Oil (1 tbsp)
- Garlic Clove, Finely Grated (1 x)
- Knob Ginger, Finely Grated (1 x)
- Red Chilli, Diced (1 x)
- Spring Onion, Sliced (1 x)
- Sesame Seeds (1 tbsp)
Method:
- Preheat the Oven to 180°C.
- Score Eggplant And Place it On A Baking Tray Lined With Baking Paper.
- Mix Ayam Sweet Soy Sauce, Extra Virgin Olive Oil, Garlic, Ginger And Chilli In A Bowl. And Cover Eggplant With The Marinade.
- Roast For 25 mins to 30 mins.
- Sprinkle With Spring Onions And Sesame Seeds.
