Here is how you can make this delicious treat in less than an hour!:

Things you will need:

  • 1 box of Well & Good Choc Mousse Cup Cake Mix (375g cupcake mix/75g mousse topping mix)
  • 3 medium eggs
  • 1/2 cup of water
  • 2 tablespoon of your choice of oil
  • 300ml of thickened cream (for mousse topping mix)

Here is the steps:

  1. Preheat oven 185 degrees celsius. 
  2. Grease a 12 cup muffin tin or line with cupcake liners
  3. Add the cupcake mix, eggs, water and oil in one large bowl
  4. Use an electric mixer and beat the mixture for about 2 minutes on medium speed
  5. Pour the batter into the prepared tray (only 3/4 high)
  6. Place in the oven for about 16 to 20 minutes. 
  7. Once baked, place them on the wire rack to cool completely.

Whilst waiting for it to cool, let us create the simple mousse mix!

  1. Whip the thickened cream with an electric mixer on high speed for about 2 minutes or until peaks form.
  2. Fold in the mousse mix and beat on low speed for around 20 to 30 seconds. 
  3. Once the mousse is incorporated into the thickened cream, place them in a piping bag with a tip of your choice.
  4. Pipe out the mousse onto the cooled cupcakes!

For the vegan version: Simply use a Vegan Egg Replacer or Chia Seeds!

Also, let your creativity go wild and of course, add toppings to finish your creation!

Ingredients: Sugar, rice flour, tapioca starch, cocoa powder, maltodexrin, non aluminium raising agents (calcium phosphate, sodium acid pyrophosphate, sodium bicarbonate), thickeners (non gmo modified tapioca starch, xanthan gum), vegetable emulsifiers (polyglycerol esters of fatty acids, mono and diglycerides of fatty acids),
iodised sea salt, natural chocolate flavour, psyllium husk.

Mousse: Sugar, maize or tapioca starch, alkalised cocoa powder.
