Simple Frittata

What is frittata? Some may say frittata are crustless quiche. It is an egg-baked filled with yummy vegetables, herbs, and a bit of cheese. It is also delicious to add some bit of chicken or ham of your choice. If you are not a savoury brunch person, this can easily be a quick dinner option.

Frittata is the #1 brunch item to make at home. It is easy, versatile and is super delicious. This recipe is best if you have many leftover vegetables you have in hand.


Ingredients:
  • 6 large eggs
  • 1/2 cup unsweetened almond milk, or any milk
  • 2 garlic cloves (minced)
  • 1/4 teaspoon sea salt, more for sprinkling
  • freshly ground black pepper
  • olive oil for drizzling

As mentioned before, frittata is super versatile. Throw in any leftover vegetables, cooked chicken or ham and it will be just deliciour. However, here is how you can make a broccoli Feta Frittata. 

  • 6 scallions, chopped
  • 2 cups chopped broccoli or broccolini
  • 1/8 teaspoon smoked paprika
  • 1/4 cup crumbled feta cheese
Steps:

Preheat the oven to 200 degrees Celsius. Whisk the eggs, almond milk, garlic, and salt until well combined and set aside. Heat 1 tablespoon olive oil in a 10-inch cast iron skillet over medium heat. Add the scallions, broccoli and a pinch of salt and pepper. Furthermore, remember to stir occasionally until the broccoli is tender but still bright green. Stir in the smoked paprika and then the egg mixture, gently shaking the pan to distribute. Sprinkle with the feta cheese and bake in the oven for 15 to 20 minutes. Additionally, if the eggs are set, then it is ready to be served!

You can easily turn this dish into dinner by adding some sides. Roasted vegetables and potatoes, alongside salad of mixed greens with a couple of cheese, is the perfect combination to making this perfect dinner!
