Applying the highest standards of production to all sakes, it achieves the smooth wonderfully pure and mellow flavors of Hakkaisan sake. In addition, the Brewery insists on producing in small batches, using hand-made koji and slow fermentation at low temperatures.

Sake is an alcoholic beverage and most famously in Japan. Sake is a varied category, running the gamut from light, inexpensive examples to rich, complex styles. It is with the variety of rice and the quality of the water providing the main differentiating factors. Moreover, sakes have much lower acidity than wines and are a lot easier to pair with foods due to their smoother easy drinking profile (this is also why they pair so well with light sashimi and sushi).
